4 Fresh Beets, any color
2 T Lemon juice
2 Garlic cloves, minced
2 T Olive Oil
Salt and Pepper to taste
Beet Greens
Feta or Goat Cheese
Roasted nuts

1. Wash and wrap each beet in foil.
2. Bake at 350* for 40 minutes. When cool enough to handle, use foil to help peel the skin.
3. In small bowl, mix next four ingredients into a dressing and set aside.
4. Dice the beets and toss with dressing.
5. Season to taste.
6. Serve over salad greens (including beet greens) and top with cheese, and nuts.
