Lunch Bowls

So many variations!!
Basic formula is 1/3 grain, 1/3 veggies, 1/3 green leaves of your choice. Drizzle oil,
squeeze lemon and grind salt and pepper to taste.
Option 1: Lentil, tomato, and cucumber salad

INGREDIENTS
1 cup cooked lentils
cup chopped cucumber
cup tomato chunks
cup mixed greens
Avocado oil
Lemon juice
Salt and Pepper
Fresh herbs

INSTRUCTIONS
1. Cook lentils according to package directions. Set aside
2. In a medium bowl, stir together, lentils, tomato and cucumber with the oil and seasoning.
3. Top with fresh herbs
4. Serve over the greens and enjoy!

Double the recipe and set portions inside quart size Ziploc bags for easy lunches on the go.
