Sweet Potato Pudding

Leftover roasted sweet potatoes
Olive oil or coconut oil
Fresh ground pepper and good salt, or cinnamon
Roasted nuts (pumpkin seeds, cashews, or pecans)
Fruit (berries etc.)
Instructions for Savory
1. In a small pot, pour 1T oil over the sweet potatoes.
2. Heat on low heat for a few minutes.
3. Top with nuts, season and enjoy!

1. Replace olive oil with coconut oil.
2. Replace pepper with cinnamon.
3. Use pecans and add berries or Pomegranate Seeds and enjoy!
